CUSCO
Population
POPULATION Until late eighteenth century, the city was the most populous in the continent, even more than Lima. But because of the great revolution of Tupac Amaru the Second in 1780, the white population migrated to Arequipa, Lima and the north of Peru. These areas were considered to be the most secure and safe places to live in the event of an uprising. Therefore, in the last century, the population was largely mestizo and indigenous. Currently the white population has grown significantly in the city. The city's population has grown by 30% and is experiencing a population explosion due to the boom in tourism.
GEOGRAPHYThe city of Cusco is located in the central part of the Peruvian highlands, down to the Huatanay River and Saphy River Valley, surrounded by high mountains. The altitude in the city is 3400m (10,800ft), and the highest snow capped mountain is the Ausangate 6380m southeast of Cusco.
CLIMATECusco has a subtropical highland climate. Its climate is generally dry and cold, with two defined seasons. The dry season lasts from April through October, with abundant sunshine, and occasional night time freezes. June is the coolest month with an average of 9.6°C (49.3°F). The wet season lasts from November to March, with night frost less common. November averages 13.4°C (56.1°F). Although frost and hail are common, snow is virtually unheard of.
GASTRONOMYCusco is an important agricultural region. Most of the highlands are planted with thousands of species of potatoes. People also cultivate white and yellow corn, quinoa, quiwicha, and many other natural products. In Cusco there are many different dishes prepared for main festivals and religious celebrations. The most important delicacy is roasted Guinea pig. Recently many fusion or Novo Andean restaurants have opened in Cusco. Their cuisine is prepared with modern techniques and incorporates a blend of traditional Andean and international ingredients.
ECONOMYTourism is the most important industry in Cusco with at least 65% of the total population working jobs related to tourism.
